Because we have the ability to customize and vegan-ize whatever items we need, it’s the perfect food for a split vegan/omni household. Not to mention, it’s a colorful dish with an opportunity for a well-rounded meal.
It really is just one of our favorite recipes.
Usually, our go-to taco filling consists of finely chopped mushrooms and cauliflower to make a ground meat -like substance, but we felt like trying something new. Jackfruit seemed like the best option, as it reminds me of the shredded meats available at Café Rio and Chipotle.
Nic made a concoction of spicy goods to marinate the jackfruit in, and we dressed the tacos with fresh ingredients like cabbage, onions, and guacamole . However, this recipe can easily be topped with so many other delicious salsas, herbs, and vegetables such as mango salsa, corn salsa, purple cabbage, cilantro, and fresh avocado. You can even get a little fancier with sour cream or chipotle aioli on top.

Description: Spicy Chipotle Jackfruit Tacos

Prep time: 10 minutes + 3 hours marinating time
Cook time: 30 minutes
Total time: 3 hours 40 minutes

Ingredients:
2 cans of young jackfruit
1 7oz can of chipotle peppers in Adobo sauce
1 10 oz can of diced tomatoes and green chilis
1 1 oz packet of taco seasoning (cumin, chili powder, garlic powder, onion powder, pepper, salt, etc.)
1 teaspoon of desired hot sauce
16 small corn tortillas
Toppings:
Finely chopped onions
Guacamole
Lime juice
How-To:
Shred jackfruit
Combine chipotle peppers. diced tomatoes and green chilis, taco seasoning, and hot sauce
Pour chili sauce over jackfruit and marinate in the fridge for desired amount ( suggested 3 + hours)
Once marinated, pour into oven-safe pan and preheat oven to 375 degrees Fahrenheit
Put pan in preheated oven
Let bake for 30 minutes or until slightly crispy on sides
While jackfruit if baking, heat up a well-oiled pan on medium heat on the stove top
Fry tortillas into taco shells by letting cook then folding over once flipped
Take jackfruit out of the oven and and serve on tortilla shells with your choice of toppings
Enjoy the spiciness!
And the best part? if you have leftovers, they make delicious nachos!
