Welcome to the latest installment of the NACFORADVENTURE YouTube channel. This week, I make one of my favorite recipes, green bean casserole. This recipe is an updated version of the Very Mushroom Thanksgiving Green Bean Casserole recipe from last year.
As someone who has a plant-based diet, I am constantly learning new ways to improve copycat recipes, and I couldn’t be more happy with how this week’s recipe came out. With a creamy mushroom base and some (absolutely delish!!!) crunchy fried onions, this recipe seriously hit it out of the park, and I’m excited I get to share it!
So make sure you have the four main ingredients; mushrooms, green beans, oat milk and an onion, and let’s get to it!

Description: Vegan Green Bean and Mushroom Casserole
Diet: Vegan
Ways to make low-waste: Buy fresh veggies, buy bulk flour, make your own oak milk
Recipes makes: 10 servings
Prep time: 15 minutes
Cook Time: 65 minutes
Put-Together-Time: 5 minutes
Total time: 85 minutes

Ingredients:
5 cups of fresh green beans
10 medium- sized mushrooms
One medium- sized onion
3 1/2 cups of oat milk
1 cup of water
1 tablespoon of Better Than Bouillon
Salt
Paprika
Nutritional yeast
Pepper
Olive oil
Neutral frying oil (like vegetable or canola)
Splash of apple cider vinegar
How-to:
Preheat oven to 350 F
Cut off end of green beans and cut in half, put aside in oiled casserole dish
Finely chop mushrooms
Sauté mushrooms in olive oil
Once mushrooms have softened, add in Better Than Bouillon and water
Pour in spices and 3 cups oat milk , let simmer
When the cream of mushroom base starts to bubble, add in flour and whisk until smooth
Take off heat and let rest for 5 minutes
Pour cream of mushroom over green beans
Place casserole dish into preheated oven
While dish is cooking, finely chop onions
Mix 1/2 cup oat milk and a splash of apple cider vinegar, place onions into oat milk mixture for 5 minutes
Mix flour, salt, paprika, and pepper, dip onions into flour mixture
Drop battered onions into frying oil
Let cook for up to 3 minutes, dry
Take casserole out of the oven, top with fried onions, and enjoy!
