Southwest Tofu Scramble

I don’t eat tofu often, but when I do…. I make it into breakfast… my favorite meal of the day. See below for my yummy (and spicy!!) tofu scramble:

Prep time: 5 minutes

Cook Time: 15 minutes

Put-together time: 2 minutes

Total time: 22 minutes

Ingredients:

Bell pepper

Tomato

Red onion

Black beans

Extra Firm Tofu

Nutritional Yeast

Soy-Rizo

Optional:

Chipotle peppers

Vegenaise

How-to:

Dice veggies (onion, tomato, red onion)

Oil pan and add onions

Let simmer for 5 minutes

Add soyrizo (literally don’t have to have seasoning cause this stuff is flavor-packed!) and stir

Add diced tomatoes and bell peppers

Sauté for 5 minutes

Cut tofu ( I usually do two thick slices and cut in half)

Add tofu and black beans

“Scramble” tofu

Add nutritional yeast

Let cook for an additional 5 minutes while you clean up

Mix chopped chipotle peppers and Vegenaise

Put Scramble in your favorite bowl

Dollop chipotle Vegenaise on the scramble

Garnish with Sriracha or preferred hot sauce
