Carrot Fried Rice

Recently, my aunt gifted us (literally) buckets of carrots, so we got extra carrot-y recipes cooking up. Let’s check out carrots: fried rice edition.

Prep time: 30 minutes (with regular rice)

Cook Time: 15 minutes

Put-together time: 0 minutes

Total time: 45 minutes

Ingredients:

Carrots

Rice (instant or regular)

Celery

Cauliflower

Sesame Seeds

Ginger

Sambal Oelek Ground Chili Paste

Kikkoman Soy Sauce

Vegan Butter

Optional: Egg or Egg Substitute

Carrot Fried Rice

Start rice

chopped carrots

While rice is cooking, chop carrots,  celery,  and cauliflower

Grate ginger

Add vegetables, ginger, and vegan butter to hot pan

Let cook until tender

Add rice, soy sauce, chili paste, and sesame seeds

Optional: fry scrambled eggs and add to rice mixture

Serve with asian-style, plant-based entrees, like orange cauliflower, fried tofu, or spring rolls
