Chickpea Breakfast Sandwich

Chickpeas are one of the most versatile vegan foods out there. It’s a perfect way to add protein to breakfast, lunch, dinner, and even snacks. I really miss my mom’s signature egg sandwiches, but by substituting the egg with mashed chickpeas, I’m still able to get everything I want.

Description: Chickpea Breakfast Sandwich

Diet: Vegan, soy-free

Ways to make low-waste: Buy bulk chickpeas, loose spinach, mustard in glass jars, local bread

Recipes makes: 1 Breakfast sandwich

Prep time: 2 minutes

Cook Time: 10 minutes

Put-Together-Time: 2 minutes

Total time: 15 minutes

Ingredients:

1/2 cup chickpeas

2 slices of bread/ 1 roll

Mustard

Spianch

1/4 avocado

Garlic powder

Black Pepper

Zatural Pink Himalayan Sea Salt

Olive OIl

Nothing but chickpeas…. and seasonings. This is a great soy-free alternative for a breakfast alternative.

Oil pan and create a small patty with chickpeas

Add seasonings

The tricks are to not mash the chickpeas too much, and to allow them to crispen up before flipping in the pan.

Flip after 5 minutes

While to second side cooks, put bread in toaster.

Top with mustard, avocado, and spinach (or other toppings of your liking).
